Ingredients
- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup freshly grated parmesan cheese
- 1 tsp Italian seasoning
- 1 cup fresh spinach
- 1/3 cup sun-dried tomatoes, sliced
- Salt and pepper, to taste
Directions
- Season the chicken breasts generously with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken for 5–6 minutes per side, until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Stir, scraping any browned bits from the bottom.
- Add parmesan cheese and Italian seasoning. Simmer 2–3 minutes until slightly thickened.
- Stir in spinach and sun-dried tomatoes until spinach wilts.
- Return chicken to skillet. Coat with sauce and simmer 2 minutes more.
- Serve warm with extra parmesan and basil if desired.
