Rustic Cast-Iron Roast Chicken

Ingredients

  • 1 whole chicken (about 3.5 lb)
  • 3 tbsp olive oil
  • 4 garlic cloves, crushed
  • 2 sprigs fresh rosemary
  • Salt & freshly cracked pepper

Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
  2. Rub the chicken with olive oil, garlic, rosemary, salt, and pepper.
  3. Place in a cast-iron pan and roast for about 1 hour, basting occasionally.
  4. Let rest for 10 minutes before carving. Serve with roasted vegetables.
