Ingredients
- 1 whole chicken (about 3.5 lb)
- 3 tbsp olive oil
- 4 garlic cloves, crushed
- 2 sprigs fresh rosemary
- Salt & freshly cracked pepper
Instructions
- Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
- Rub the chicken with olive oil, garlic, rosemary, salt, and pepper.
- Place in a cast-iron pan and roast for about 1 hour, basting occasionally.
- Let rest for 10 minutes before carving. Serve with roasted vegetables.
