Savoury Breakfast Sauté

  1. Heat a stainless steel sauté pan over medium heat and add the olive oil.
  2. Add the diced potatoes and cook for 8–10 minutes until golden and crisp.
  3. Add the onion and bell pepper; cook until softened and lightly caramelized.
  4. Season with smoked paprika, salt, and pepper.
  5. Create four small wells and place a small knob of butter in each.
  6. Crack an egg into each well; reduce heat to medium-low.
  7. Cover and cook until the whites set but yolks remain runny (or to your preference).
  8. Top with fresh herbs and serve warm.
