Ingredients
- 3 medium potatoes, diced small
- 1 small onion, thinly sliced
- 1 bell pepper, diced
- 2 tbsp olive oil
- 1 tbsp butter
- 4 eggs
- ½ tsp smoked paprika
- Fresh herbs (parsley, chives, dill)
- Salt & pepper to taste
Directions
- Heat a stainless steel sauté pan over medium heat and add the olive oil.
- Add the diced potatoes and cook for 8–10 minutes until golden and crisp.
- Add the onion and bell pepper; cook until softened and lightly caramelized.
- Season with smoked paprika, salt, and pepper.
- Create four small wells and place a small knob of butter in each.
- Crack an egg into each well; reduce heat to medium-low.
- Cover and cook until the whites set but yolks remain runny (or to your preference).
- Top with fresh herbs and serve warm.
