A tajine is both a traditional North African cooking vessel and the name given to the slow-cooked dishes prepared inside it. Recognized by its wide, shallow base and distinctive cone-shaped lid, a tajine is designed to cook ingredients gently while keeping moisture, aroma and flavour inside the pot.
