The Anatomy of a Knife: Understanding Every Part

The Anatomy of a Knife: Understanding Every Part

Posted by KitchenEssentials.ca on 22nd Sep 2025

A kitchen knife may look simple at first glance, but it is actually made up of carefully designed parts that each serve a unique purpose. Understanding the anatomy of a knife helps you choose the right one for your needs, maintain it properly, and use it more effectively. Let’s break down the essential components:

1. The Blade

The blade is the most important part of the knife. It’s typically made from stainless steel, carbon steel, or high-performance alloys. Within the blade, you’ll find several sections:

  • Edge – The sharpened part of the blade that does the cutting. It can be straight, serrated, or granton-edged.

  • Tip – The front section of the blade used for delicate cutting, slicing, and precision tasks.

  • Spine – The top, unsharpened edge of the blade that adds strength and stability.

  • Heel – The rear portion of the blade, closest to the handle, used for heavy-duty chopping.

2. The Tang

The tang is the portion of the blade that extends into the handle. A full tang runs the entire length of the handle, providing balance and strength, while a partial tang only extends partway, usually making the knife lighter but less durable.

3. The Handle

The handle gives you control and comfort while using the knife. Handles can be made from wood, composites, or synthetic materials. Key parts of the handle include:

  • Scales – The pieces of material on either side of the tang, secured with rivets.

  • Rivets – The fasteners that hold the scales to the tang.

  • Butt – The end of the handle, sometimes used for light pounding.

4. The Bolster

Found mainly on forged knives, the bolster is the thick junction between the blade and the handle. It adds weight for balance, protects your fingers, and strengthens the knife overall.

5. The Point

The very tip of the blade is called the point. It’s perfect for piercing and precision work, especially when making small, detailed cuts.

Why Knife Anatomy Matters

By understanding knife anatomy, you can better appreciate the craftsmanship behind high-quality knives, such as Shun, Miyabi, and Global. Each part of a knife has a role in ensuring balance, sharpness, and efficiency. When you know how these parts work together, you can select the perfect knife for your cooking style and care for it to ensure it lasts a lifetime.
