What size chef knife should I buy? +

Japanese or German—what is the difference? +
Japanese knives are generally lighter and thinner for precise slicing. German knives are typically heavier and more robust for rocking cuts and demanding everyday use.
What is the difference between forged and stamped knives? +
A forged knife is shaped from heated steel under pressure and is usually thicker, heavier and more substantial in the hand. Forged knives often include a bolster and may provide excellent balance and durability. A stamped knife is cut from a sheet of steel and is generally lighter, thinner and more flexible. Modern stamped knives can still offer excellent sharpness and performance. Steel quality, heat treatment, blade geometry and construction are more important than the manufacturing method alone.
Is a forged knife always better than a stamped knife? +
